In
a recently restored Blackburn shopping arcade, with a heritage dating
back to 1849, Matthew Mayman has set up a business very much inspired
by modern food trends. He's doing a roaring trade in takeaway soups
which he makes himself and then serves up daily, alongside foods
from around the world.
Matthew's love for international food fuelled his desire to start
Chilli Lime Deli in 2003 and his soups have made a welcome return
to his lunchtime take out menu after their debut last year.

His
soups are inspired by his travels and by the seasonal offerings
from his veg supplier in Ewood.
Pumpkin soup was an idea he picked up from living in Australia for
a while. He cuts the pumpkin in half, takes out all the seeds and
then roasts it in the oven. The pumpkin half fills up with all the
juice from the pumpkin which he uses as stock to add extra flavour
to the soup. He makes a non-spicy version and a spicy version using
Thai spices and coconut milk.
Most of Matthew's soups are vegetarian-based to appeal to a wide
range of people. His favourite soup at the moment is courgette soup,
made with stewed courgettes, stock and cream. He says it's a real
comfort soup, goes down easily and warms you up!
