Yvonne鈥檚 Mini Strawberry Meringues
Ingredients:
250g strawberries, cut into small chunks
8 ready-made meringue cases
2 tbsp of caster sugar
150ml double cream or whipping cream
150g of mascarpone cheese
1 tsp of vanilla extract
Extra strawberries and mint to decorate
Method:
1. Place your strawberries in a bowl and sprinkle with 1 tbsp of caster sugar and leave for 30 minutes.
2. Put the cream, mascarpone, vanilla extract and remaining sugar in another bowl and whisk until it thickens and forms peaks.
3. Then chop or food process the strawberries.
4. Now fold the strawberry mixture into the cream.
5. Put the cream and strawberry mixture into the meringue cases and top with strawberries and mint!
