Italian Rarebit with Emerald Pesto.
Ingredients:
1. 2 cups fresh basil, or parsley leaves or a combination of the two
2. 1/2 cup freshly grated cheese, cheddar, parmesan, or any hard cheese with a punchy taste
3. 1/2 cup extra virgin olive oil.
4. 1/3 cup pumpkin seeds
5. 3 garlic cloves peeled and finely grated
6. Juice of half a lime
7. Freshly ground black pepper to taste
To make the pesto:
Put everything into a blender, add a few twists of freshly ground black pepper, process until you have a fairly fine paste. If you don鈥檛 have a blender, use a pestle and mortar to grind the basil, cheese, seeds and garlic into a paste, then add the oil and lime juice, and pepper.
To make the Rarebit you will need:
1. 6 slices of mozzarella cheese
2. 6 slices of ciabatta or similar cut to the size of the slices of mozzarella
3. Extra virgin olive oil
4. A few basil leaves
5. 6 slices of Parma ham
Spread a generous amount of pesto onto the slices of ciabatta, place a slice of mozzarella on top, followed by a basil leaf. Wrap a slice of parma ham all the way around the bread, starting at the top, wrapping all the way under the crust of the bread and back to the top again. Place the wrapped bread onto an oiled baking tray, sprinkle with olive oil, season with pepper and place into a pre-heated oven for about 15 minutes until the cheese has melted. Serve with a crisp green salad and sliced tomatoes.
