This week's Food Friday is a cheap and easy cheat recipe from Hazel Paterson.

These can be thrown together in just minutes and are perfect for a picnic. Simply make them in clean jam jars, pop the lids on and place them in your cool box to enjoy later.

Ingredients: (makes 4)

* 8 digestive biscuits, crushed
* 60g melted butter
* 250g raspberries (or halved strawberries if you prefer)
* 300ml whipping cream
* zest of 1 lemon
* 250g mascarpone
* 300g jar good lemon curd
* 2 ready made meringue nests

Method:

1: Combine the biscuits and butter and divide between 4 glasses (or jam jars), use the end of a rolling pin to push the mixture firmly into the bottom
of the glass.

2: Put the cream, mascarpone and lemon zest in a large bowl and beat together using an electric whisk for a couple of minutes until you have gone
beyond soft peaks to firm up slightly more. Put into piping bag.

3: Put the lemon curd into a separate piping bag.

4: Add a layer of raspberries on top of the biscuit mixture then add a layer of lemon curd, followed by the cream mixture.

5: Crush some meringue and add a layer then continue with another layer of lemon curd, then cream mix then a final layer of raspberries. Top with the remaining crushed meringue.
