Food Friday - Chocolate Berry Steamed Pudding

This week's Food Friday recipe comes from local food writer and Bake Off finalist, Holly Bell..... Speedy Chocolate Berry Steamed Pudding This is a dangerous recipe to have in the house; you’re basically only ever 15 minutes away from a very naughty chocolatey steamed pudding. No mixer required, just stir it all up with a fork and off you go. Serves 2–4 • 55g butter • 15g golden syrup • 55g soft dark brown sugar • 10g cocoa • 1 large egg • 80g self-raising flour • 2 tablespoons milk • 30g frozen mixed berries (or fresh) Take a microwavable cereal-sized bowl (at least 9cm high and 8cm across), place the butter in it and microwave on ‘medium’ for 1 minute or until the butter has melted; add the syrup and stir. Add the rest of the ingredients, apart from the berries, and whisk with a fork for 2 minutes until smooth and well combined. Stir in the raspberries and microwave for 5 minutes on ‘high’, without a lid, until the pudding is well risen. Remove from the microwave and allow to stand for 5 minutes before serving. Be careful ¬– the berries will still be piping hot! Serve straight away; this pudding is best served warm. If you do eat it cold then serve with pouring cream, gelato or custard to counteract any dryness.
