The Goose was once the bird of choice for the Christmas table, but has largely been eclipsed by the Turkey. However, there is still demand for this most seasonal of birds, so much so that for some farms it can be the major part of their income. Claire Symington and her husband Robert have been farming geese at Seldom Seen Farm near Market Harborough in Leicestershire for nearly thirty years, even though they never really planned to. Ben Jackson has been to the farm at their busiest time of year.
