Food Friday - Apple Custard Cupcakes

Apple Custard Cupcakes Ingredients: - Approx. 325g eating apples - 3 tablespoons custard powder - 140g margarine, softened - 140g sugar - 3 eggs, chopped - 1 teaspoon vanilla essence - 140g SR flour Method: Heat oven to 180c/160c Fan/mark 4 gas. Peel and dice the apples. Toss in the custard powder. Cream margarine and sugar. Add eggs gradually. Add vanilla essence, fold in the flour, stir in the coated apples. Divide between 12 muffin tins, lined with paper cases. Bake for 18 to 20 minutes until lightly golden and a skewer inserted into the centre comes out clean. Leave to cook on wire rack. Enjoy.
