Mum's Special Apple Pie. This extra special Food Friday recipe comes from Ben's Mum, Gill. Ingredients: 1) 11/2 Pounds of Cooking Apples 2) Juice of ½ Lemon 3) Pastry for the base and top (Shop bought is OK) 4) 4 oz Granulated Sugar 5) 2 oz Dark Brown Sugar 6) 1 Tablespoon Plain Flour 7) 1/8 Level Teaspoon Grated Nutmeg 8) 1/4 Level Teaspoon Powdered Cinnamon 9) Grated Peel of ½ Orange 10) Grated Peel of ½ Lemon 11) 2 oz Chopped Raisins and Sultanas 12) 1-2 Tablespoons Orange Juice 13) 1-2 Tablespoons of Butter Method: 1) Peel and core the apples and slice thickly then soak them in water to which you have added the lemon juice to keep their colour (otherwise they will discolour and go brown). 2) Line a deep 9-inch pie dish with pastry using your own favourite recipe or shop bought. 3) Combine the granulated sugar, dark brown sugar, plain flour, nutmeg, cinnamon and rub a little of this mixture into the pastry lining. 4) Add grated peels to the remaining sugar mixture. 5) Cover the bottom of the pastry shell with the sliced apples and sprinkle with a few of the chopped raisins and sultanas and some of the sugar mixture. 6) Repeat layers until the pie shell is richly filled. 7) Sprinkle with orange juice; dot with butter and fit the top pastry crust over the apples, pressing the edges together or fluting them. 8) Decorate pastry; cut slits in the top crust to release the steam and bake in a moderately hot oven (400o F/ 200o C, Mark 5 for 35 to 40 minutes, or until tender. 9) Serve warm, with custard or cream.
