Invasive blue crabs in Italy excite South Korean foodies

Newshour

Available for over a year

The Italian fishing industry is battling a plague of blue crabs - an invasive and predatory species that has been decimating traditional shellfish production off the Italian coast. Some reports suggest as many as 90 per cent of Italy's young clams have been devoured by the crabs. But an invasive pest for Italy might have found a culinary fan base in South Korea. Â鶹Éç Newshour's Tim Franks spoke to Yim Hyung-soo, a specialist on Korean food and Director of the Korean Culture and Arts Centre in the UK, about the most exciting and delicate crab dish enjoyed in Korea.
