Managing Director Nick Hodgetts says a 10% levy might not sound large, but could result in huge changes to the family-run supplier's business model. During the pandemic, when food festivals and trade shows were shut down, the cheesemaker turned turned to the USA to fill the gap. Four years on, the move remains a huge success.
