SAUSAGE
By Jean Lee
Jean and her mother and sister help her father make Chinese sausages. You can buy sausages in Chinese supermarkets but he has his own recipe - pork, pork fat, herbs, flavourings, wine. The minced mixture is then pumped into sausage skins which are hung up to dry. It's what Chinese families used to survive on.

Beautiful! I love sausage but I eat only a little. My mother makes chinese sausage too. My sisters, however, pay others to make it. Machine-made sausage taste a little different from home-made ones. Sausage now, sausage then.

It made me want to go out and buy some right now. I had no idea you could make them at home, aubergine optional.
