The doyenne of Irish cooking Darina Allen demonstrates how to cook the perfect Potato Cakes, and to talk about her new book ‘Irish Traditional Cooking’. Darina founded the world-famous Ballymaloe cookery school in County Cork, where she teaches cookery and runs a farm. She is passionate about using local produce and traditional recipes, and is encouraging every chef in Ireland to feature at least one local dish on the menu.
