Our favourite supper is Leftover Roast Chicken with Parsnip and Watercress
Salad Leftovers, carouselled with Leftover Bread and sluiced with
Leftover Wine.
I recommend
a Fratelli Camino Rosso Conero Cumaro 1995. It has an oak nose,
then dark notes of leather, game and roasted fruits, with plenty
of grip from the mouth-coating tannins. It's a very pure and well
balanced wine. Many rosso conerosi have compared it to 'a nun
on a tightrope.' It's one of those wines you really don't want
to have sex with.
For

Elton John (or a Bishop or Cabinet Minister - someone important
who needs a break from 'dinners')

Italian pugliese loaf

67gms un-organicsalted organic butter
Pepper, colour-of-night
Salt, wind-dried
Tarragon, savaged
10 parsnips, baby
2 lettuce hearts, still-beating
A fistfulle of French watercress
13 almonds (ask your amandier for grands)
Vinegar, overpriced
