The seven Sussex things that make the South heaven
If I could but forget the Amberley trout
Trout Meuniere with Almonds
4 x fillets of trout
100g butter
1 lemon, juiced
50g flaked almonds
1 tbsp chopped parsley
De-bone the fillets but leave the skin on. Melt the butter
in a hot pan. Season the skin of the trout and place in the pan, skin
side down. Cook until golden, then turn the trout over. Add the lemon
juice and almonds. Finish with the chopped parsley before serving.
